Miso Shiru (Bean Paste Soup)
Japanese
Serves 4


INGREDIENTS

5 cups dashi
2 tablespoons aka miso (red bean paste)
4 cubes of tofu
2 spring onions, sliced diagonally
2 sliced mushrooms


COOKING METHOD

Bring dashi to a boil, then mix with bean paste in a small bowl, stirring until smooth.

Pour mixture back into saucepan, stir well, add tofu and spring onions. Return to boil. Simmer for a few seconds.

Ladle into bowls, garnishing each with a slice or two of mushroom. Serve hot.
